Stranded in Australia & the Solace of a Tavern
Not long ago, I found myself stranded in the Town of Tarkine, nestled in the North West Corner of Tasmania, Australia.
I was on a getaway with my girlfriend, but as usual, I made a silly remark about something. Suddenly, I found myself dumped out of the car and trudging my rain drenched body to the nearest tavern.
I sat by the fire an hour later in Tall Timbers Tavern, still drenched and regretting my life choices. As I tried to dry off, I struck up a conversation with the tavern chef, Terry. He was new to town, too, and trying to come up with a new menu for the locals.
It was Tuesday, and I joked about Taco Tuesdays in the States being popular in bars around the country.
The First Taco Tuesday at Tall Timbers Tavern
Suddenly, we agreed – Terry would introduce the first Taco Tuesday at the Tall Timbers Tavern in Tarkine Tasmania. How many more letter t’s could we put into one sentence?
We excitedly wrote this in big letters on the chalk board behind the bar and hunkered down to decide on the menu!
Luckily, I always keep a bottle of Chabé® in my pack and introduced it to Terry and the staff in the kitchen. They were hooked immediately! My new friends and menu co-creators had never tasted a hot sauce so packed full of robust flavor and heat.
The Perfect Spicy Recipe
We came up with a Chabé and Cola Pork Butt recipe.
We cooked this recipe for 5 hours in a slow oven and served it on soft tortillas with spicy coleslaw and combined the leftover sauce with mayonnaise for an extraordinary treat.
The recipe was a hit that night! We sold out in under two hours, and people were still queuing up to order. It was such a hit with the locals, that Terry decided to make Taco Tuesday a weekly event.
I still keep in touch with Terry, and he says Taco Tuesday is the biggest night of the week in that small tavern.
Of course, Chabé® Sambal is also a permanent fixture in his kitchen.
